Pork Chops are a dinnertime staple to make on the grill but they are just as tender, juicy and delicious when they are made like fried chicken strips or chicken fried steak.
Chicken Fried Pork Chops ~ Southern Fried Crispy Pork Chops
Pork chops make a hearty and delicious dinner that everyone can agree on. This pork chop recipe is made with a simple seasoned flour and buttermilk batter that is incredibly flavorful.
Ingredients Needed:
- Boneless Pork Chops
- All Purpose Flour
- Granulated Garlic
- Onion Powder
- Dried Thyme
- Smoked Paprika
- Kosher Salt
- Black Pepper
- Buttermilk or Whole Milk
- Egg
- Vegetable Oil
Ingredients for Milk Gravy:
- Bacon Grease or Butter
- All Purpose Flour
- Kosher Salt & Pepper
- Whole Milk
- Heavy Cream, optional

How to Make Chicken Fried Pork Chops:
- Line a baking sheet with parchment or aluminum foil.
- Line another baking sheet with a paper towel and a wire rack.
- Place flour in a shallow dish and mix with seasonings, salt and pepper.
- In a separate shallow bowl, whisk together buttermilk and egg.
- Dredge pork chops in flour, coating both sides lightly.
- Place into egg dip and turn to coat both sides.
- Return to the flour mixture coat all over with flour.
- Dip once more into egg mixture and then into flour.
Place breaded pork chops onto lined baking sheet.
- Use a cast iron skillet or dutch oven to heat the vegetable oil to 350° using a deep fry thermometer.
- Carefully lower pork chops into hot oil one at a time.
- Maintain oil temperature between 350° and 400°.
- Cook pork chops for about 4- 5 minutes, carefully flip pork chops.
- Continue to cook until pork chops are golden brown and reach an internal temperature of 135° - 140° using a digital meat thermometer.
- Carefully remove pork chops, letting the excess oil drain from the pork chops.
- Place on wire rack lined baking sheet.
- Allow pork chops to rest while you prepare the gravy. Loosely cover with foil to keep warm.
How to Make Milk Gravy:
- Place bacon grease in a skillet and place over medium-high heat and add flour.
- Whisk continually, cooking until flour starts to brown.
- Add milk, salt and pepper. Continue whisking until mixture is thickened. If you would like a richer gravy, add a bit of heavy cream.
- Once gravy has thickened, remove from heat.
- Serve pork chops with gravy and mashed potatoes.
Recipe Variations:
Double dipping the pork chops makes the thick crispy crust but if you like less crust, you can just do the initial dip into flour, egg, and flour mix before frying. It's delicious either way.
Optional Batter Ingredients:
- Hot sauce can be added to the egg mixture for a spicy kick.
- We sometimes will use Lawry's Seasoned Salt in place of the spices and add a little salt. Italian seasoning is another great addition.
- Bread crumbs can be added to the flour mixture for extra texture if desired.
Cooking Time for Fried Pork Chops:
We used 1 inch thick loin chops and they cooked in about 10 minutes at about 375° oil temperature. If you are using thin chops, they will cook faster. The digital thermometer is the best way to know how long to fry pork chops.
If you remove them from the frying pan at about 135 - 140° and allow them to rest, they will be tender and juicy pork chops.
How to Store and Reheat:
Store leftover pork chops wrapped in plastic wrap, foil or airtight container in the refrigerator up to 3 days.
To reheat, place on a baking sheet and cook at 400° for about 6- 8 minutes until heated through. Pork chops can also be reheated in an air fryer at 370° for about 4 minutes.
