You probably have most of the ingredients for banana muffins in your kitchen already. Below is the full list of ingredients so you can double-check that you have everything you need. 

  • 1/3 cup melted coconut oil 
  • 1/2 cup maple syrup 
  • 2 eggs
  • 3 Organics Unlimited Bananas, mashed 
  • 1/4 cup almond milk 
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 and 3/4 cups whole wheat flour
  • 1/3 cup old-fashioned oats, plus more for sprinkling on top
  • 1 teaspoon turbinado (raw) sugar or other granulated sugar, for sprinkling on top

Grease your muffin tin. 

Whisk coconut oil and maple syrup in a large bowl. 

Add eggs and continue to whisk.

Slowly add mashed bananas and mix until combined. Add almond milk, vanilla, salt, and cinnamon and whisk again.

Add flour and oats and mix with a large spoon. 

Evenly divide your batter into your muffin tin and top with oats and sugar.

Bake for 22-25 minutes at 325℉. Let cool and serve warm.

Why add bananas?

Bananas are the not-so-secret weapon when it comes to our take on banana muffins. Bananas are naturally sweet, so you can automatically cut back on the sweetener you add to the batter. Along with adding extra vitamins and minerals, bananas naturally replace some of the fat like butter or oil typically used to thicken the batter. 

Be careful not to use more bananas than the recipe calls for because your muffins may become heavy and look uncooked in the center.

How to Properly Store Muffins

Banana muffins will keep at room temperature for up to two days. Store them in a plastic bag or an airtight container in a single layer lined with a paper towel. The paper towel soaks up the  moisture so your muffins don’t become soggy. Room temperature storage keeps your muffins fresh.

If you really want, you can store banana muffins in the fridge for up to four days. Just make a note that storing any muffins in the fridge can change the texture and taste. They don’t stay as soft and fluffy, and the sweet banana flavor may not be as strong.

Again, we don’t want to end up with soggy muffins from the frozen crystals that form in the freezer. Wrap each individual muffin with aluminum foil and place them in a freezer bag, in a single layer. This makes it easy to take out the exact amount of muffins you need when you’re ready to eat them and helps keep them tasting fresh by preventing freezer burn. When stored properly, banana muffins keep in the freezer for up to three months.

To thaw your muffins, unwrap them and let them thaw on your counter. If you’re like us, we love our muffins warm, like they just came out of the oven. You can pop your muffins in the microwave for 30-45 seconds or reheat them in the oven at 400℉ for 10-15 minutes.

  • 1/3 cup melted coconut oil

Instructions

  • Preheat your oven to 325℉. Grease your muffin tin with non-stick cooking spray or rub a stick of butter all around the bottom and sides. Be sure to get in the corners as much as possible.
  • Whisk the coconut oil and maple syrup together in a large bowl. Add the eggs and whisk until they're mixed well with the oil and syrup. Slowly add the mashed bananas (maybe half at a time) and whisk until combined.
  • Use a tablespoon to fill your muffin cups about two-thirds full. You will probably be able to fit about two heaping tablespoons of batter into each muffin tin.
  • Sprinkle oats and sugar on top of your muffins and bake for 22-25 minutes.
  • Place your muffin tin on a cooling rack to cool and enjoy your banana muffins.

  • You can use paper or silicone liners to easily get your muffins out of the tin. 
  • Use a butter knife to separate your muffins from the tin if you aren’t using liners.
  • Don’t overmix your batter to avoid a rubbery texture.
