Cinnamon Raisin Artisan Loaf Recipe

2 cups cool water
1 1/4 tsp yeast
2 tsp salt
1 T cinnamon
2 T brown sugar
3 c 1/2 flour
1 c raisin (or dried cranberries)
Add to bowl. Mix until shaggy, scraping once
Cover bowl
Rest dough 12-24 hours
Swirl and flour while in bowl
Turn onto floured surface
Sprinkle lightly with cinnamon and brown sugar
Fold and shape
Place on parchment
Cover with tea towel
Rest 30-60 minutes
Set oven to 450 degrees
Put empty Dutch Oven inside cold oven for 30 minutes while dough rests
Place dough in hot Dutch oven
Bake 35 minutes on middle rack
Take off lid
Bake 3-5 minutes more
Remove from oven
Cool on wire rack
