Balsamic Rosemary Pork Chops

Ingredients:
- 1 ½ lbs. green beans, washed/dried/trimmed
- 1 ½ lbs. (4) boneless pork chops
- 2 tsp finely chopped fresh sprigs rosemary (leaves striped)
- 1 chicken bouillon cube dissolved in 1/3 cup hot water
- 3 ½ Tbsp balsamic vinegar
- 2 tsp stevia (or white sugar)
- Homemade Garlic butter:
- 4 Tbsp softened butter
- 1 tsp minced garlic, mashed
- 1 Tbsp dried parsley
- 1 French baguette
- 1 tsp pepper
Directions:
Roast Green Beans:
- Adjust rack to top position and preheat oven to 425˚F.
- Toss on a baking sheet with a drizzle of oil and pepper.
- Roast in oven for 12-15 minutes or until browned and tender.
Prep & Cook Pork:
- Pat pork dry with paper towel and season both sides with pepper.
- Heat a drizzle of oil in large cast iron pan over medium-high heat. Add pork; cook until internal temp reaches 145˚/browned; 4-6 minutes per side.
- Turn off heat; transfer pork to a cutting board and let rest for at least 5 minutes before cutting.
Make Sauce:
- Heat a drizzle of oil in same pan over medium-high heat. Add chopped rosemary; cook, stirring, until fragrant, 30 seconds.
- Stir in chicken stock, balsamic vinegar and stevia. Bring to a simmer and cook, stirring occasionally, until slightly reduced, 3-4 minutes. Season generously with pepper.
- Turn off heat. Stir in 2 tbsp garlic butter until melted.
Finish & Serve:
- Halve baguette lengthwise and toast; spread cut slices with remaining garlic butter.
- Thinly slice pork.
- Divide pork, garlic bread, and green beans into 4 servings. Top pork with balsamic rosemary pan sauce and serve.
