Balsamic Rosemary Pork Chops

Ingredients:

  • 1 ½ lbs. green beans, washed/dried/trimmed
  • 1 ½ lbs. (4) boneless pork chops
  • 2 tsp finely chopped fresh sprigs rosemary (leaves striped)
  • 1 chicken bouillon cube dissolved in 1/3 cup hot water
  • 3 ½ Tbsp balsamic vinegar
  • 2 tsp stevia (or white sugar)
  • Homemade Garlic butter:
    • 4 Tbsp softened butter
    • 1 tsp minced garlic, mashed
    • 1 Tbsp dried parsley
  • 1 French baguette
  • 1 tsp pepper

Directions:

Roast Green Beans:

  1. Adjust rack to top position and preheat oven to 425˚F.
  2. Toss on a baking sheet with a drizzle of oil and pepper.
  3. Roast in oven for 12-15 minutes or until browned and tender.

Prep & Cook Pork:

  • Pat pork dry with paper towel and season both sides with pepper.
  • Heat a drizzle of oil in large cast iron pan over medium-high heat. Add pork; cook until internal temp reaches 145˚/browned; 4-6 minutes per side.
  • Turn off heat; transfer pork to a cutting board and let rest for at least 5 minutes before cutting.

Make Sauce:

  • Heat a drizzle of oil in same pan over medium-high heat. Add chopped rosemary; cook, stirring, until fragrant, 30 seconds.
  • Stir in chicken stock, balsamic vinegar and stevia. Bring to a simmer and cook, stirring occasionally, until slightly reduced, 3-4 minutes. Season generously with pepper.
  • Turn off heat. Stir in 2 tbsp garlic butter until melted.

Finish & Serve:

  1. Halve baguette lengthwise and toast; spread cut slices with remaining garlic butter.
  2. Thinly slice pork.
  3. Divide pork, garlic bread, and green beans into 4 servings. Top pork with balsamic rosemary pan sauce and serve.
