Christmas Breakfast Sandwich Recipe on plate

Nothing quite says Christmas morning like mimosas cinnamon rolls. Now you can have a holiday breakfast & open gifts at the same time thanks to these Christmas morning breakfast sandwiches!

Why this recipe works:

Fluffy cinnamon rolls make the perfect bread for a special breakfast sandwich.

Apple chicken sausage adds a balance of sweet and salty flavors.

Perfectly fried eggs add a velvety texture & a boost of protein.

How to Make these Christmas Breakfast Sandwiches:

Use your favorite cinnamon rolls (either packaged or homemade), and bake according to the directions. I like using the extra-large cinnamon rolls, since it is easier to fit the sausage and egg on.

While the cinnamon rolls are baking, cook frozen apple chicken sausage patties in a skillet set over medium heat for 10-12 minutes, or until heated.

In a separate non-stick skillet, heat to medium-low heat, and coat with cooking spray. Add 3 eggs at a time, cook for 2-3 minutes, flip, and cook for additional 2-3 minutes, or until cooked to your liking. Repeat for remaining amount of breakfast sandwiches.

When cinnamon rolls are cooked, let cool for 5 minutes before slicing in half, in a similar fashion to a hamburger bun, BUT dont cut all the way through. Leaving a little in tact helps the sandwiches stay together better. Top one half with sausage and fried egg, replacing with other half of cinnamon bun. Repeat for set amount of breakfast sandwiches, and drizzle each with prepared or homemade icing before serving.

Pro Tips:

  • Use extra large cinnamon rolls to better fit the sausage and egg.
  • Add a slice of cheddar cheese to each sandwich to take these up a level.
  • Dont cut the cinnamon rolls in half all the way. Leaving a little in tact helps them stay together better.

Can these be made ahead of time?

These are best made fresh, but the cinnamon buns can be made ahead of time, and simply reheated when ready to top with sausage and eggs. Some sausage can be cooked in the microwave for a faster cooking method.

What kind of cinnamon rolls do I use?

I prefer the pop & bake kind of cinnamon rolls since they are quick & easy. Opt for the extra large size to better fit all those fillings. My favorite brand is Immaculate Baking (not sponsored) since they do no use any hydrogenated oils.

Money Saving Tips for these Christmas Breakfast Sandwiches:

  • Buy a larger package. For eggs that is. You get more for your $$$ if you buy a dozen or 18 pack vs only 6. Then you can make this savory bread pudding or a frittata for the morning too!

These Christmas Breakfast Sandwiches are the perfect recipe for starting the holiday morning with! Fluffy cinnamon rolls filled with chicken apple sausage, fried eggs, and a drizzle of icing!

  • 1 canister extra-large cinnamon rolls with icing
  • 1 package (6 count) pre-cooked breakfast apple chicken sausage patties
  • 6 eggs
  • cooking spray

  1. Preheat oven to 350F.
  2. Bake cinnamon rolls according to package instructions.
  3. While cinnamon rolls are baking, coat a large skillet with cooking spray.
  4. Heat over medium heat, and add chicken sausage.
  5. Brown on both sides, about 5-6 minutes each side.
  6. Set cooked sausages on a paper towel lined plate, and set aside.
  7. Coat pan with spray, and fry eggs to preferred doneness.
  8. Remove cinnamon rolls from oven, and let cool on wire cooling rack.
  9. Slice each cinnamon roll in half horizontally, leaving a small amount uncut.
  10. Add a sausage patty and egg to each roll, and top with icing.

  • Dont cut all the way through the cinnamon rolls when slicing for the sandwiches. This helps to keep them from falling apart.
  • Use the extra large cinnamon rolls to make sure you have plenty of room for the good stuff inside.
  • Prep the night ahead: Make each sandwich without adding the icing. Wrap each in foil, and reheat in a 350F oven for 10 minutes before serving. Drizzle each with icing before serving.
