Ingredients:
- 1⅔ cups all-purpose flour
- 3½ tbsp sugar
- 2½ tsp baking powder
- ¾ tsp salt
- ¾ tsp cinnamon
- A pinch of nutmeg
- 2 large eggs
- 2 tsp vanilla
- ½ cups milk, or more if you want
- 2 tbsp melted butter, cooled
- 2 cups canola oil, or more as needed
Apple Mix
- 2 apples
- ¼ cup lemon
- 2 tbsp sugar
- ¼ tsp cinnamon
- 2 tbsp butter
- ¼ tsp vanilla
Glaze
- 2 cups powdered sugar
- ¼ cup milk
- ½ tsp vanilla
Directions:
Step 1
Peel and cut the apples into small bite-sized cubes, then place them in a large mixing bowl, add the lemon juice, and give them a good toss until combined. Place a large skillet pan on a stove over medium-low heat, then melt the butter, and add the apples followed by the sugar, cinnamon, and vanilla. Toss them all together until combined, then allow them to cook for about 8 minutes while tossing consistently until the liquid has evaporated, and then turn off the heat. Remove the cooked apples from the pan and set them aside.
Step 2
In a large mixing bowl, whisk together the flour, sugar, salt, cinnamon, baking powder, and nutmeg until incorporated and uniform, then in a separate bowl, stir together the milk, beaten eggs, and vanilla until well combined, and add it to the flour mixture. Add the apples as well along with the cooled melted butter, then continue to mix them until combined, and set it aside. Place a skillet pan on a stove over medium heat, then heat up the oil, and scoop the batter into the pan. Cook 2 to 3 fritters at a time to not overcrowd the pan for about 1 to 1.5 minutes, then flip them over once golden brown, and let the other side cook for a few more minutes or until evenly browned.
Step 3
Line a baking sheet with a paper towel, then place a wire cooling rack on top, and place the cooked apple fritters to drain off all the excess oil. While waiting for the apple fritters to cool down, prepare the glaze in a large mixing bowl. Simply whisk together the powdered sugar and vanilla while pouring in the milk a little at a time while mixing continuously until incorporated and the desired consistency is reached. Glaze the apple fritters, then serve, and enjoy!
