Ingredients in buffalo chicken fries

These fries are SO easy to make! Here's everything you need on hand:

  • russet potatoes, cut into fries (or 1 bag of frozen fries)
  • chicken breasts
  • buffalo wing sauce (I like Frank's red hot the best)
  • mozzarella cheese
  • blue cheese, crumbled
  • green onions
  • tomatoes
  • cilantro
  • Carrots and celery to serve (optional, to serve on the side)

How to makebuffalo chicken fries

Here's how to make buffalo chicken fries:

  1. Slice potatoes into fries, then toss with olive oil, salt and pepper. Bake for 15 minutes, then flip and bake another 10 minutes if using frozen fries, follow the package instructions.
  2. While fries are cooking, saute chicken with buffalo wing sauce until cooked through.
  3. Remove fries from the oven, then top with grated mozzarella and return to oven, cooking another 5 min until cheese is melted.
  4. Remove from oven and top with chicken, blue cheese, green onion, tomato and cilantro. Serve immediately and enjoy!

How to make the best oven fries

Here are some tips to making the BEST oven fries!

  • Cut your potatoes EVENLY using a mandoline or just by being very careful sometimes I will trim down an individual fry if I feel it's too flat on either side to ensure it will cook evenly. Cutting the right fry shape by handgets easier to do with practice we're looking for a perfect, even square shape people!!!
  • Soak the fries in water to remove starch for about 5 minutes, then dry them completely with a clean towel
  • Add olive oil (but not TOO much) and toss in a huge bowl with just salt and a tiny bit of pepper. Really, that's all you need
  • Bake for 13-15 minutes in a fully preheated 450F degree oven, then flip and cook for a shorter period after they've been flipped (usually 8-10 min)

BOOM. The way you eat fries will be forever changed my friend.

Ingredient substitutions

There are plenty of substitutions you can make with these loaded fries! Here are some options:

Fries Instead of making the fries from scratch, you can just use a bag of frozen fries 0r even do sweet potato fries to bump up the nutritional factor. Either way, these fries will taste amazing!

Chicken Instead of chicken breast, you can use ground chicken and mix it with the buffalo sauce for equally delicious results. You could also even use buffalo cauliflower if you want to make this recipe vegetarian.

Cheeses I use mozzarella and blue cheese in this buffalo chicken fries, but you can use any cheese you have on hand or leave out the blue cheese if you don't like it. Cheddar is another great choice!

Toppings You can literally use any type of toppings you'd like! Don't have something on hand? Go with what you do have at home! Pickled jalapenos, olives, corn, bell peppers, red onion and more can be added.

What type of buffalo sauce?

Buffalo sauce is a combination of hot sauce, Worcheshire sauce, vinegar, butter and seasonings. Its easy to make your own, but there are lots of options on the market for just purchasing a bottle. My personal fave is the Frank's Red Hot Buffalo Wing Sauce, but if you're concerned about spice you can use 1/3 cup of that and mix it with 2 tbsp of melted butter, which will cut the heat.

Storing and reheating

If you're looking to store leftovers, make sure you separate the fries and toppings for best results. You can reheat the fries in a 350 F oven for about 10 minutes, then add all of your toppings fresh. Unfortunately you can't microwave these loaded fries with good results (they'll go soggy), but the leftovers will keep in the fridge up to 3 to 5 days.

Freezing buffalo chicken

You can cook up the buffalo chicken and freeze it if you'd like to make some of the toppings for these loaded buffalo fries ahead of time! Just add the chicken to glass bowls with lids and freeze up to 3 months. You can defrost in the fridge overnight then microwave for a couple minutes before adding to your fries.

Homemade oven fries

  • 1 tbsp olive oil
  • 2 large russet potatoes, cut into fries
  • 1 tsp salt
  • 1/4 tsp pepper

Buffalo chicken

  • 1 tbsp olive oil
  • 2 chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 cup buffalo wing sauce (I like Frank's red hot or the PC brand!)

Toppings

  • 1 cup grated mozzarella cheese
  • 1/2 cup blue cheese, crumbled
  • 4 green onions
  • 1 plum tomato, diced
  • 2 tbsp chopped fresh cilantro
  • Carrots and celery to serve
  1. Preheat oven to 450 F. Slice potatoes into fries, then rinse under cold water to remove as much starch as possible. Dry fries with a clean towel, then toss in a large bowl with olive oil, salt and pepper.

  2. Line two baking sheets with parchment and insert both into oven on middle rack, cooking for 13-15 min. Flip fries, then cook another 8-10 min.
  3. Meanwhile, heat olive oil in skillet on med-high heat. Add chicken and salt, sauteeing for 3-4 min until browned. Add buffalo wing sauce and cook for another 8-10 min until cooked through. Remove from heat and set aside.
  4. Remove fries from oven when done cooking. Top with grated mozzarella and return to oven, cooking another 5 min or so until cheese is melted. Remove from oven and top with chicken, blue cheese, green onion, tomato and cilantro. Serve immediately and enjoy!
