  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

  • 2 cups buttermilk
  • Vegetable oil, for frying

Instructions:

  1. In a large mixing bowl, whisk together the flour, salt, pepper, paprika, garlic powder, onion powder, dried thyme, dried oregano, and cayenne pepper (if using) until well combined to make the dry dredge mixture.
  2. Place the chicken pieces into the bowl of dry dredge mixture and coat each piece evenly, pressing the flour mixture onto the chicken to adhere. Shake off any excess flour.
  3. Pour the buttermilk into a separate shallow dish. Dip each flour-coated chicken piece into the buttermilk, allowing any excess buttermilk to drain off.
  4. Dip the chicken back into the dry dredge mixture, pressing the flour mixture onto the chicken to coat evenly. Shake off any excess flour.
  5. Heat about 2 inches of vegetable oil in a large skillet or Dutch oven over medium-high heat until it reaches a temperature of 350°F (180°C).
  6. Carefully add the coated chicken pieces to the hot oil, being careful not to overcrowd the pan. Fry the chicken in batches if necessary.
  7. Fry the chicken for about 12-15 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and crispy.
  8. Using tongs, carefully remove the fried chicken from the hot oil and place it on a wire rack or paper towel-lined plate to drain any excess oil.
  9. Allow the fried chicken to rest for a few minutes before serving to allow the juices to redistribute.
