Flatbread Tacos

Flatbread Ingredients

  • 4 c AP flour
  • 1 T baking powder
  • 2 t kosher salt
  • 1 1/2 c milk – warmed
  • lard, for frying

Flatbread Instructions

  1. Combine the dry ingredients and whisk to mix.
  2. Add in 1 1/2 cups of the milk and stir to combine until it just comes together.
  3. Give it a couple of good kneads in the bowl to bring together the dough into a ball.
  4. Put it onto a lightly floured surface and knead 10-20 times until it comes together and is a bit smooth (it doesn’t need to be as smooth as regular bread dough).
  5. Cover it with a damp towel and let it rest for 15 minutes.
  6. Heat the oil to 350ºF while rolling/stretching out the dough.
  7. Divide the dough into 12 equal pieces. Flatten/roll each piece into a disc about 5-6 inches in diameter.
  8. Working with just a couple pieces at a time, slide the discs into the hot oil and fry until it is golden brown on one side, then flip and fry the second side. It should take about 2-3 minutes per side.
  9. Drain on a rack with a paper towel under it to catch the drips.

Toppings

To serve, we top a piece of the fry bread with refried beams, some ground beef mixed with salsa, lettuce or cabbage, salsa, cheese, crème fraîche and red onion.

It’s also good with some melted butter and either honey or cinnamon/sugar.
